291 Colorado Whiskey Teams With Master Distiller Marianne Eaves for Special Blend

291 Colorado Whiskey has come together with master distiller Marianne Eaves as part of her exclusive 2021 Eaves Blind series– a collection of one-of-a-kind whiskey collaborations between Eaves and select non-Kentucky distillery partners – to create the 291 “E” Eaves release.

Eaves, Kentucky’s first female master distiller, lent her palate to create the release, which is one of eight curated single-source blended bourbons in the Eaves Blind program. Eaves Blind not only teaches nuances of tasting bourbon and the process of making it, but also highlights the fact that great bourbon can be made anywhere, not just in Kentucky.

For the inaugural release, Eaves spent weeks with 291 team sampling their Colorado bourbon which is finished with Aspen staves. From there she married her ideal version of 291 Colorado whiskey, and the end result was a 129.6 proof bourbon whiskey with a smokey sweet grain and oak, floral and fruit essence.

“Blending is as much of an art as is distillation,” said Eaves in a news release. “I want people to taste this release and know this is Colorado whiskey. This is 291.”

The limited release, with the signature Eaves Blind black label, is available for sale ($150) at 291’s tasting room in Colorado Springs beginning Feb. 2nd and nationally through the Eaves Blind store (https://www.eavesblind.com/buy).
