Milam & Greene, Azamara Cruises Team Up for ‘Bourbon Quest’
Milam & Greene Whiskey and Azamara Cruises, the small-ship cruise line, have announced a partnership for a bourbon journey at sea: Bourbon Quest.
One of four bourbon barrels embarked aboard the Azamara Quest on March 26, 2026, remaining at sea throughout the 188-night 2027 World Cruise, which will visit 37 countries. The remaining barrels will continue aging on land in Texas, Kentucky, and Florida. The mastermind behind the barrels is Marlene Holmes, Master Distiller of Milam & Greene.
The experiment is designed to highlight how climate affects bourbon, with the only variable being the location of aging. Results will be revealed in 16 months once the barrel returns from its voyage.
This initiative brings together Azamara Cruises’ Destination Immersion philosophy with the craft spirit expertise of Milam & Greene Whiskey to age a barrel at sea during a worldwide cruise. This barrel will be compared with others aged on land in different climates to evaluate how maritime conditions influence the whiskey’s maturation.
“Being on a ship exposed to the open air, we expect that the higher humidity levels would work to slow evaporation over the same time period in a drier climate,” Rikk Munroe, Director of Distillery Operations at Milam & Greene, said in a news release. “As for temperature, the fluctuations over time between higher and lower temperatures will drive the whiskey into and out of the wood, resulting in more complex flavors in the finished whiskey. We are excited to see the effects the ocean climate will have on this barrel as a follow-on to our earlier maturation experiments.”
The collaboration involves barrels in the final stages of their six-plus-year aging journey, originally filled in Kentucky on November 11, 2019. The contrast between sea and land aging — exposed to differences in movement, temperature, and humidity — promises to create distinctive flavor variations in the bourbon.
“We expect the dynamic aging environment on board to add a deeper oak character to the whiskey,” Munroe said. “The constant motion of the vessel, over the course of the voyage, should agitate the liquid against the inside of the barrel, driving more oak influence on the whiskey. We would expect to see more intense notes of vanilla, caramel, and spice, along with a darker color, versus barrels aged in a static environment.”
The result will be an ultra-limited, collectible bourbon, with approximately 400 units available exclusively to Azamara guests. Throughout the cruise, the barrel will be showcased onboard in a specially designed display, sharing the story of its journey from embarkation to bottling. Guests will have a front-row seat to its transformation every step of the way.
