Chattanooga Whiskey Bottled In Bond Vintage Fall 2021 edit

Chattanooga Whiskey announced the release of its newest Bottled in Bond Vintage: Fall 2021. Distilled and barreled at the company’s Riverfront Distillery from July 2021 to December  2021, this vintage – like those preceding it – was developed through a collaborative, multi-month selection process  by the entire distilling team.  

“Every six months, our team looks through our wide library of recipes to decide which ones have what it takes to find their way into a blend,” Grant McCracken, Founding Distiller, said in a news release. “From mash bill, to yeast strain, to barrel toast, every component is considered in the blending  process — until ‘the best blend wins’.”

This latest vintage features a new mash bill to the series: SB104. Made with only three grains (and two roasted and toasted malts), this simple yet aromatically-rich mash bill was originally developed at the company’s  Experimental Distillery (2020) before scaling up to the Riverfront Distillery (2021) – and now joins Chattanooga Whiskey’s Bottled in Bond tradition.

Named after the 104th barrel ever filled at the Experimental Distillery, SB104 is a simple but expressive three-grain bourbon mash bill made with: 

 • 74% Yellow Corn from Catesa Farms in Riddleton, TN 

 • 15% Canadian Malted Rye (slow toasted)

• 11% Belgian “Cara-Munich” Malted Barley (drum roasted)

Comprising 20% of the overall blend, SB104 highlights the impact of slow toasted rye malt and a unique caramel malted barley known as “Cara Munich.” This uniquely aromatic malt was produced through a long, warm sprouting process, followed by a high temperature roasting – thereby yielding a richer, more complex flavor profile.

“SB104 was a standout in our blending – adding bright spice, subtle fruit, and a baked-pastry quality that locked in  with the others,” McCracken said. “Because it uses only two specialty malts, that flavor impact reads even louder. If I had to sum it up, it’s like taking the other three mash bills, brushing them with a fruit glaze, then baking them like a cake.”

The Blend 

Made in only two small batches of 10 barrels each, the final blend consists of four mash bills:  

 • 30% SB091 (aka “Barrel 91”) 

 • 20% B005 (aka “Wheated”) 

 • 30% SB055 (aka “Roasted”) 

 • 20% SB104 (new) 

Chattanooga Whiskey Bottled in Bond: Fall 2021 Vintage will be available at the Chattanooga Whiskey  Experimental Distillery beginning October 16, 2025, and on shelves in select states in the following weeks at  $52.99 for a 750ml bottle.
